Strawberry Fields Patisserie owner and patissier, Simon Bimson is a French trained baker and pastry chef. Continually inventive, he sources the best local ingredients to produce products that are freshm unique and singular. With nearly 20 years in the industry starting as a kitchenhand in Newtown, he trained at Ryde Tafe and finished his apprenticeship at Luke Mangan's Glass Brasserie.
In February 2012, his life time dream of opening his own Bakery/Patisserie came true, he started Strawberry Fields from the ground up in Dulwich Hill - the area where he lives and adores, the inner west.
